You'd be amazed how long 10-12 minutes really is. We use the Canon 7D in our offices all the time for filming our content and behind the scenes footage and it really isn't a limitation.
However, there is a "hack" out there for the 5D MKII that removes the file size/clip length restriction as well as allows the 5D to record in true RAW 1080p, not to mention it unlocks the sensor to capture at resolutions greater than 1080p. It voids the warranty of course but still, how cool is that.
As soon as CMOS sensors are able to do away with rolling shutter anomalies there will be no limit to what applications can be handled by the Canon DSLR lineup.
If people knew what went into making a film they would probably look at their home theaters differently.
